Magic Masala Chicken Burger
Ingredients
- 2 tbsp sunflower oil
- 1/2 lemon juice
- 3 tbsp plain yogurt (optional for dairy free)
- 3 tsp Magic Masala
- 2 chicken breast
- 4 burger buns
- Romaine lettuce leaves
- Beef tomatoes sliced
- Red onion sliced
- Sliced mini gurkins
- Mayonnaise, Ketchup, French mustard
- Fresh coriander leaves
Preparation
- Mix Magic Masala and lemon juice in a medium bowl.
- Slice each chicken breast in half, lengthwise so that you have two “fillets”.
- With the edge of a saucer or a meat mallet gently tenderize and flatten the meat to break up the stringy fibres.
- Season the chicken with the marinade and leave covered for a couple of hours or in the fridge for best flavor.
- Remove chicken from the fridge minimum 30 mins before cooking.
- Heat your griddle pan or wait for your coals to burn out. When ready, grill the chicken for about 2-3 minutes on each side on a high heat. Do not overcook, the chicken must remain juicy and soft but not pink inside.
- While the chicken is cooking toast your buns under the grill until nicely brown.
- This is where the fun starts; when the chicken is ready, layer up your bun with the lettuce, chicken, sauces, tomatoes, onions, gurkins coriander and lettuce.
