Magic Masala Spinach Curry


  • 2 tbsp oil
  • 2 medium onions finely sliced
  • 3 tsp Magic Masala
  • 2 bags spinach finely chopped
  • Pinch of salt to taste


  • Heat oil in a wok or pan on a medium heat
  • Add sliced onions and sauté until soft and yellow in colour.
  • Add Magic Masala and salt.
  • Stir and cook for 2 minutes until the oil oozes from the masala.
  • Add the spinach leaves and mix in with the masala.
  • Cover and cook for 10 minutes until the spinach has all wilted and absorbed into the masala stirring occasionally. Checking it’s not sticking to the pan. 
         Serve with hot buttery roti and mango pickle.
         This is how mum made it! So simple yet so good!
